How We Make Dark Chocolate at Harlech Chocolates Celtig Cofiadwy

There are just three ingredients in our dark chocolate bars, including our famous dark chocolate Welsh dragon bars - cocoa nibs, sugar and cocoa butter. In this two and a half minute video, our Master Chocolatier, Liss Morgan takes you through how our small batch dark chocolate is made.


The video shows from the basic ingredients until its ready to temper and pour into moulds. The process takes well over a day, and we make our artisan chocolate just one kilo at a time to make sure each is perfectly ground, blended and balanced.


Our artisan dark chocolate is an art of balancing heat and ingredients. You might have spied our little black and decker heat gun in the video? When we start with a clean stone grinder, the grinder is cold. With temperature being key to ensuring a rich blending of chocolate ingredients, we use the heat gun to heat the grinder at the start of process, until the momentum of the grinding cocoa nibs starts to heat it up. Of course, by the time its been grinding and mixing for over 24 hours the chocolate mixture and grinder is deliciously warm.
